Tiramisu Crepes are a delightful fusion of two classic desserts, combining the delicate texture of French crepes with the rich, coffee-infused flavors of Italian tiramisu. These light, fluffy crepes are filled with a creamy mascarpone mixture, layered with hints of espresso and cocoa, creating a decadent dessert perfect for any occasion.

Crepes

  • 100g Plain Flour
  • 2 Eggs
  • 300ml Milk

Filling

  • 300ml Double Cream
  • 250g Mascarpone
  • 2 Egg Yolks
  • 75g Sugar
  • Double Espresso Shot (OR 75ml hot water and 2 tsp instant coffee)
  • 2 Tbsp Sugar
  • 2 Tbsp Coffee Liquor (or whatever alcohol u want)

Step 1

Mix the espresso, sugar and alcohol until the sugar is dissolved. Leave to chill in the fridge

Step 2

Whisk the flour, sugar and eggs for crepe batter and let it rest for 30 mins.

Step 3

Whisk together the mascarpone, egg yolks and sugar using an electric whisk until smooth. Pour in the double cream and continue whisking until it's thick like whipped cream. This will take around 10 mins of whipping, make sure the cream is very cold.

Step 4

Brush a nonstick pan on a medium-low heat with a tsp of oil and pour in a ladle of batter and swirl the pan to evenly coat. Once the top starts to bubble flip the crepe and cook for 30 secs on the other side. The first one always looks a bit rubbish, have it with some lemon and sugar and keep going

Step 5

Dip the crepes into the coffee mix, only for a few seconds so it doesn't get too soft. Lay it down flat and spread over 4 tbsp of the mascarpone filling. Fold into quarters, top with a dollop cream and dust over the cocoa powder.
