This Tomato and Garlic Curry is a deliciously simple dish that packs a punch of flavour. With the rich sweetness of ripe tomatoes and the boldness of garlic, this curry is both aromatic and comforting. Perfect for a quick weeknight dinner or a hearty addition to any meal, it pairs wonderfully with rice or flatbreads.

Ingredients

  • 8 Garlic Cloves
  • 1 Kg Tomatoes
  • ½ Tsp Cumin Seeds
  • 2 Tsp Chilli Powder
  • 1 Tsp Ground Coriander
  • 1 Tsp Ground Cumin
  • ½ Tsp Turmeric
  • Handful Of Coriander

Step 1

Coarsely chop the garlic and cut the tomatoes into large chunks. Finely chop the coriander, including the stems.

Step 2

Heat a generous amount of oil in a large pan over high heat. Fry the cumin seeds until they begin to pop. Add the garlic and cook for about 30 seconds, or until lightly browned.

Step 3

Stir in the tomatoes, chili powder, coriander powder, cumin powder, turmeric, and ½ teaspoon of salt. Gently stir to avoid breaking the tomatoes.

Step 4

Cook for 2 minutes, just until the tomatoes are warmed through, ensuring they stay whole and aren’t broken down. Stir in the coriander and serve over rice or with roti, or chapati, depending on your preference.
