Spice up your meal with this vibrant Tomato Habanero Soba Noodle Broth! This dish combines the earthy goodness of soba noodles with the bold, smoky heat of habaneros and the rich tang of tomatoes. Perfect for those who crave a little kick in their comfort food, this flavourful broth is both warming and invigorating.

Ingredients

  • 300g cherry tomatoes
  • 1/2 habanero
  • 50g physalis (or 1/2 peach )
  • 1 tbsp fish sauce
  • 1 tsp soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 170g soba noodles
  • 1 lemon
  • 2 spring onions

Step 1

Dice the tomatoes and physalis (or peach) and place them in a bowl with the salt. Let them sit while you finely mince the habanero.

Step 2

Use your hands to crush the tomatoes and physalis, releasing all the juices and breaking the tomatoes into a pulpy texture.

Step 3

Cook the soba noodles, then rinse them under cold water.

Step 4

Add the fish sauce, soy sauce, chili, and sugar to the tomatoes. Stir well with a spoon. (Avoid using your hands again once the chili is added!)

Step 5

Finely chop the spring onions. Divide the soba noodles between two bowls, then pour the tomato broth over them. Top with the chopped spring onions and a generous amount of lemon zest.
