Indulge in the ultimate comfort food with this rich and savory Triple Cheese Pie. Packed with three types of cheese, this pie offers a delightful blend of creamy, melty goodness in every bite. Ingredients

  • 200g Feta, crumbled
  • 200g Strong Cheddar, grated
  • 200g Smoked gouda, grated
  • One bunch spring onion, chopped
  • 500g filo pastry
  • 6 eggs
  • 500ml milk
  • 50g butter
  • 3 cloves garlic

Step 1

Preheat the oven to 190°C (fan-assisted).

Step 2

Grate the garlic into a microwave-safe bowl and add the butter. Microwave for 1 minute, or until the butter is melted and the garlic begins to froth.

Step 3

In a large bowl, combine the cheeses, eggs, milk, butter, and spring onion. Season with 1/2 teaspoon of salt and freshly cracked black pepper.

Step 4

Place two sheets of filo pastry into a 23cm springform pan.

Step 5

Tear the remaining filo into pieces and, one at a time, gently fold it into the cheesy mixture with your hands, making sure there are no clumps of filo.

Step 6

Pour the mixture into the pan and bake in the oven for 50 minutes.

Step 7

Let the pie cool completely for 1 to 2 hours before serving and enjoying! :)
